I remember it like it was just yesterday. I had tried almost everything in the book, and liked it, except brussels sprouts. There is this stigma surrounding them as though they are pure evil. But you have it all wrong! They are just like all the other green hearty vegetables that you know and love. So please, give brussels sprouts a chance! (Two cheesy music/movie references in one post? That’s going to be a record)
One of my most favorite quick fix meals when I get home from work at 9pm is a quick stir fry of veggies. And not your typical carrots and broccoli, I like something that really fills me up and makes me feel good. I also like to throw some chips or rice on the side, because I just need a little extra. My favorite way to do up brussels sprouts is easy, and simple, and tasty.
Easy Brussels Sprouts (that taste good!) Stir Fry
5 whole brussels sprouts split in half, or in to fourths
10 cherry tomatoes cut in to halves
A handful of spinach
1 clove of garlic
1 tbsp of lemon juice
Spice of your choice (I use cumin. But you can use basil, rosemary, whatever you like on your veggies)
Salt and pepper to taste
Heat up your oil in a medium size pan. Add in the garlic, and stir till brown. Then add in the brussels sprouts first, since they will take the longest to cook. Sitr for 4-5 minutes. Add in the tomatoes and the spinach, and your lemon juice. Stir until the spinach has wilted then add in your spice.
